When the leaves turn yellow, it seems like pumpkin flavoured foods come out in full-force. Pumpkin-spiced lattes, pumpkin bread, pumpkin pie, even pumpkin beer. And rightfully so! There’s something comforting and warm about pumpkin flavours. So why not keep yourself warm with these pumpkin-inspired recipes?
Pumpkin Pancakes
Ingredients
- 1 ½ cups milk
- 1 cup of pumpkin puree (fresh or canned)
- 2 tablespoons vegetable oil
- 2 tablespoons vinegar
- 2 cups all-purpose flour
- 3 tablespoons brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon allspice
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ½ teaspoon salt
Directions
- In a bowl, mix the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
- Heat a lightly oiled frying pan or griddle over medium high heat. Pour or scoop the batter onto griddle, using approximately ¼ cup for each pancake. Brown on both sides.

Pumpkin Loaf
- 1 can pumpkin puree
- 4 eggs
- 1 cup vegetable oil
- 2/3 cup water
- 3 cups white sugar
- 3 ½ cups all-purpose flour
- 2 teaspoons baking soda
- 1 ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- ½ teaspoon ground cloves
- ¼ teaspoon ground ginger
Directions
- Preheat oven to 350 degrees. Grease and flour three 7X3 inch loaf pans
- In a large bowl, mix pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
- Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.
